I went for a service after buying a used car and the mechanic told me the previous owner had the the whole dash removed to repair something. My question is, what are the possible problems that could have needed dash removal to be repaired

There likely won't be any issues if the dash removal and re-installation was done properly. Perhaps something with the heating and air conditioning needed repair.
