why does my 2000 chevy 3500 5.7 hard shift from 1 - 2 gear.

When driving my truck, it will shift hard from 1-2
gear, all other gears are fine.

Check the transmission fluid level and the battery voltage. If both of them are good, have the codes read to see if any are pending.
