Acceleration issues

What causes my RPMs to jump higher than they
need to while trying to accelerate or trying to
break?

Probably your transmission is slipping. I’m guessing it’s an automatic? You can check the fluid color and level using the red dipstick, the color should be a light red. If it’s dark red it needs to be changed, if it’s black I would ask a mechanic. Your tranmission can also slip for many other reasons, but checking the fluid is a easy first step.
