Cooling fan controls.

I just replaced my power steering pressure line and my car now seems to be
running hotter.  I've done some research and, to be honest, I usually run my
AC during warm weather.  Today I decided not to worry about the AC.  
Normally my temp gauge hovers around the first mark past the 100 but today
it kept climbing.  I shut down before the gauge hit 220.  So I'm worried that I
might have dislodged something at the firewall while changing the power
steering pressure line or, with my research, I haven't let the car warm up
enough for the fans to come on normally without the AC running.

I've read somewhere that the fans don't come on till it hits 225 degrees. Under normal operation on the road, my car rarely gets over around 160... According to my dash temp gauge.
