Winter Tires? 2019 Mustang GT Premium with Performance pack 1

I have the following Wheel Size with Brembo's
255/40ZR19 100y(front) and 275/40zR19 105y (rear)

Looking to get Winter tires? What size tires are recommended? Should I
downsize?  

I will be driving atleast 3 times a week in Winter. I live In Toronto.

I would go narrower but with a different aspect ratio such as 50 series to keep the diameter the same. Maybe 17" wheels with 50 or 60 series tires. Use an online tire calculator to pick the size you want.
