For the last three fuel fill-ups, my Astra has stalled as I tried to start it at the gas station. It only stalls right after I fill it up, no other time. Could this be a problem with the EVAP system?

You need to change the purge valve on the engine. Its right on top by the back of the engine. What is happening is it is stuck open. When you get gas all the vapors from the gas splashing into the gas tank are getting into the intake manifold flooding the engine.
