01 Tahoe engine dies while driving

So I changed the valve cover gaskets on my
Tahoe and now it shuts off while driving is
there any reason why that would happen
after I changed the gaskets

Doesn't have anything to do with the gaskets. You must have knocked something loose, perhaps a sensor wire or a vacuum line. Give it a good visual inspection, look for pinched wires or broken, disconnected vacuum lines
