Car overheating

Car overheating  95 Camaro z28 onces I put
it in gear it jump from about 200 to 240 what
could be the problem? Some body please
help me its driving me crazy

I would like to no what could be the problem with my car I have a 95 Camaro z28when I leave it running the temperature hand stays at half about 200 but when I put the car in gear the hand move to 240 and then back down to like 200 what could it be I replace thermostat and new water pump
