Temperature gauge is overheating reading at 210°

I've just replaced the thermostat (160°) today and gave it a
good flush.. the water pump was changed last year and
had a whole new radiator put in it last year as well. But the
temperature is still reading at 210°... What could be the
problem? Any ideas?

210 is not bad. You should be running a 195 degree or higher thermostat in order to have the engine operating at top efficiency. A 160 t stat could have the engine running rich because the ECU thinks the engine is still warming up. Try Water Wetter to reduce the operating temps a few degrees.
