Overheating

I have a 2002 chevy express 2500 6.0,it got overheated on the highway so i
let it cool down and remove the thermostat put it back together put some
water in it and start driving,overheated again,maded home and next day I
replaced the water pump,fan,fan clutch and the radiator, and I didn't put the
thermostat back then I even followed the instructions on how to bleed and
refill my coolant,went back to work next day and the temperature stays 2lines
above 1/2 but yesterday 10-7-2017 almost got to red again and remember I
didn't put the thermostat back so today I'm going to change my coolant
temperature sensor i really don't wanna think of head gasket or clogged
block,if any body have ideas to help is really appreciated THANKS.
