I need to "turn off alarm" for the shipping company moving my car. They also need spare set of keys. I bought this car a few days ago and already seeing some cause for concern regarding this.

seriously don't want to mess things up. Someone else picking up for me on an island and ship leaves in 3 days.

You can't shut it off only a dealer can, take the battery cable off then ship it...
