Car feels like its overheating

Hello,
I have a 2004 Toyota Camry 2.4L with roughly 180k miles. Recently I noticed
that my temp gauge stays at around the middle mark but the car feels hot
still. I recently replaced the temp sensor, thermostat, two main hoses,
radiator and water pump. I noticed before that in traffic the needle would not
go passed the middle mark, however when I began to increase speed the
needle would go down. Now the needle stays in the middle no matter what
once hot and does not move up or down. Could I have a faulty thermostat
and would probably need to go the OEM route. I have pretty much changed
all major cooling parts. I noticed my fans are not consistently on and only
come on for a few seconds at a time. Could the cheap thermostat and temp
sensor be the problem.

It sounds like there is nothing wrong,the parts are working. As far as the air,check the reservoir level,add if required.If you check the radiator be careful,open only half way to relieve the pressure,then open and look for fluid and check if its flowing and is hot.If low top up and re-check reservoir level.
