In modern cars, that is anything with a computer and that includes your twenty-five year old Avalon, disconnecting the battery while engine's running can be fatal. You can damage or destroy the computer and electronics, and that might be the cause of your problem. Your alternator is not keeping up with the cars electrical needs when moving beyond idle. Get the alternator, and the entire electrical system, checked.
