Taking off my catalytic converters

I have a carbon deposit or something in my catalytic converter that causes a rattle when at idle or right after I accelerate. I have a 97 gmc k1500 with a 5.7, I am running a stock exhaust besides a flowmaster super 50. if I just delete the cats should I be fine to continue to daily drive without getting pulled over everytime I pass a cop? I am currently in VA and will be moving to CA in a couple of months, I know cops in these states a complete A##holes.

alright. I don't have to worry about inspections because I have out of state tags and I am military. so I get exempt. is it really gonna be that loud?

Your truck may not run properly without the cat. Fill out California form 5045.

Even if i have NC plates. Nc exempts me from inspections due to being out of state and military. So i wont have to get an inspection in cali
