Can you safely drive a Chevy Impala with a
bad oil senser?

Depending on the year of the car, on the new cars if the oil pressure sending unit detects a low oil pressure it will tell you to, or may shut the engine down on ya. But since you didn't mention the year, oil pressure sending units are part of the system for the motor to run properly, and they can leak oil. You can drive the car safely, may see some grief from it not functioning tho.
