My xterra has been sitting at pep boys for about a
month. They changed the evap canister, the fuel
pump, and fuel injector and the car will start but it
won't stay on while driving. What could it be?

Apparently not obvious to you as your car still sits at PB's. You don't give anything to go on which means you need a good mechanic.

if they changed the evap canister t must have had a code indicating Gross vacuum leak detected. Change the gas cap first if that doesn't do it could be the evap purge valve, valve cover gasket if no vacuum hose can be seen disconnected or hear a hissing noise. However I do agree with FOR Pepboy mechanics are ASE certified idiots in most cases.
