2005 Grand Prix GTP

I am trying to install pioneer aftermarket stereo.  Is there a way to connect the
wires on the steering wheel plug without having to buy the adapter?  A way to
hard wire it or use a jump wire?

You need to use an adapter. Hacking into the existing factory wiring is ALWAYS a bad idea.
