When I turn on my AC my truck strats to sputter when I'm driving

Either your AC compressor is locking up and putting a strain on your engine. Unplug your AC compressor from engine and you will know!

If only does this at an idle. Possibly dirty/faulty idle air control valve. It's job is to idle vehicle up when at idle and ac or other acc are running.
