what should my 2008 santa fe , be at when going 70-75 mph ?   what is the  + , - signs for on near the shifter near  N, Drive ?

+ and - signs near the gearshift are usually to indicate shifting using the manual feature on an automatic transmission. Taking a look at the owner's manual will usually answer your questions.
