i have a 1996 BMW 318i 140k miles; body is in excellent shape; needs a new
engine; should we sell the body parts or the entire car for the most profit

Parting out will net you more money, but take more time, then you have to scrap the shell if you can't find a buyer. Selling the whole car at one is easier, but net you less dough.
