If I replace the stock Exhaust on my 2015 VW GTI with an aftermarket cat-back will it mess up any sensors, or cause problems with Inspection & Emissions, or Warranty from Dealership?

It will do all of the above !

It shouldn't mess up sensors because it is a Cat-Back...meaning it comes after the CAT. I am keeping stock downpipes, and CAT. What do other people think?

The sensors should be fine, but not sure you will pass emissions in California...
