Why does my oil pressures fluctuate

When the truck is in idle it's at 40 nothing above nothing
less but as soon as I hit the gas sometimes it'll go to 60
sometimes it'll go to 80 and sometimes I don't even drop
down to zero but it only happens when I hit the gas what
could be wrong with it?

Actually sounds normal. The oil pump is driven by the camshaft. When at idle the oil pump is pumping slower because the engine RPMs are lower. When you accelerate the engine speeds up and so does the oil pump. So your oil pressure increases. Also the oil pressure will be higher when the engine is cold because the oil is thicker.
