Temperature fluctuating

I have changed the radiator I have change the
thermostat and I put new coolant the thermostat is
the origin of GM thermostat the coolant is Dexcool
but the radiator is not original now when I drive on
the highway when the temperature is cold outside
my car runs cold and he comes down to a quarter
it does not stay in half  what should I do

Sounds like the cooling system needs to be purged from air pockets. Air in the cooling system.
