Truck starts/idles fine bogs out when pressing on the gas peddle too far.

I have a 1987 Ford 250 7.5l automatic, 66k miles.
Ran great for the last 3 months but now Boggs out
when I hit the gas peddle too far.  it'll get up too
35mph if I press lightly on the gas peddle. I was
real low on gas in both the main and the reserve
tank so I got to a gas station and filled em full.
Now this problem is occuring. My dad thinks the
problem is the gas distribution(somewhere is
plugged) maybe some residue in the tank got into
the fuel pump when it was low? Before this
problem It was leaking a little gas from the fuel
filter(connects to the carburetor) before this
problem which I fixed just by tightening the fuel
filter. could the problem be the fuel pump? Or the
fuel regulater? Does this sound like it might be
plugged somewhere? I know a little about basic
vehicle stuff but this is a whole new problem so
any feedback would be great.

Also when I sprayed starting fluid directly into the carburetor it revved up well with no troubleing noises in the engine. It feels like it's just not getting the full flow of gas when I push down on the peddle.

Smae thing happens with my 88 ford festiva it bogs out when i press the gas but when i put gas in the carb it revved fine temporary
