2008 Yukon Engine Hot AC off

I have a 5.3 Vortec v8 and when my truck sits
overnight and I go to start it, it will say engine hot
turning ac off, it won’t even start, it only cranks like
the fuel trim is disabled. I replaced the coolant temp
sensor, the wire and connector for that too, the
thermostat, water pump, and it’s having the same
issue.

The people at the shop said they didn’t get a code from it, it’s just saying it’s overheating when it’s sitting outside without being started that day.
