What is this small black button on the dash, which you can push in or turn?

I thought maybe it's to reset the Trip Meter.

I figured it out. When you push in and turn it switches between miles & kms. There is no trip meter. Next, I'm trying to figure out the lights. It looks like maybe: Parking lights, Off, Headlights, High Beams?

The headlight switch without fog lights is, from left, auto, off, parking lights, headlights. If you have fog lights it's the same but to turn on the fog lights pull the switch knob. The trip meter is displayed when you momentarily press that button to switch from miles to kilometres. To reset the trip meter press and hold the button while the trip meter is displayed. It will reset to 0.0. Then you can press the button again for the total mileage odometer. HTH. -Jim

Also, there is a symbol I don't know: (!) It's to the right of the right blinker arrow.

I've never reset my keyless entry pad (on the door) code. I believe you need the factory code to punch in first, then you can punch in your new code. You can talk to your local Ford Dealer. They can probably get the factory code by using your vehicle identification number (VIN). You'll need to have proof of ownership. Your driver's license and the vehicle registration will do. The symbol next to the right turn signal arrow on the instrument cluster is the tire pressure monitoring system (TPMS) warning light. It should come on for a few seconds when you start the car then go out. If it remains on one of your tires is low on air. If it flashes for several seconds then stays on you have a bad TPMS sensor.
