overheat / tach issue

The car redline temp, so I turned it off. Upon inspection, I notice that the car was not doing the normally overheated gurgling nor a computer code entered. My fan was a bit sluggish so I changed it out with a new one. A day later the same scenario. Attempted to replicate it a day later at the repair shop, nothing happened. As of now been a few days not getting any indication of overheating. What can cause this to happen, any particular piece /unit I should direct my attention to? Can a dealership diagnostic computer see things that a regular repair shop computer cant? One other thing my tach was reading 1200 traveling at 50 mph while in cruise control. The tack seems a bit low to me. Should the tach be higher than 1200 at 50 mph?

I would change the thermostat, it could be sticking. I change radiator hoses on cars, just to be safe, if they look old. The rev thing? smell the trans oil, to see if there is any 'burning cork" smell. If so, "danger will robinson"
