Cooling / heating issues

2006 Buick Redezvous 133k. Well maintained. Last
winter/spring season I had replaced the original thermostat   
replaced due to lack of heat in car. It will be warm (not hot)
then cold & back again. A month or so later I had it
replaced again. Bad part? Now 6 months later I'm having
same issues. Temp gauge will sometimes rapidly increase
causing me to pull over. Sometimes the temp gauge will be
in normal operating range & have no heat. You can also
hear a gargling sound in the car from time to time.
My thought was I have air in the system due to the
thermostat replacement. Its not a simple replacement due
to the fact the throttle body has to be removed. I've tried
burping the system with some success. Any other
suggestions? I'm thinking a radiator flush first?

I'd like to add this is an everyday rider. No problems over the summer (warmer months).

First, check your coolant level and make sure there is sufficient liquid in the system. If that is good, are you absolutely sure you put in the new thermostats in the proper direction? Past that, check for continuous flow from the water pump and through the radiator. If flow is sporadic or sluggish, you may need a new pump or radiator.

..this also doesn't happen everyday. Saturday I drove & ran errands for half the day. No indication of over heating on gauge. The heat temp fluctuated a couple times but no big swings. Drove into work Sun am no problems. Sun night, overheating (according to the gauge) & no heat. Today, heat was great with no overheating problems. What gives?

Answer is still the same. Check your coolant level first then move on to the other suggestions made.
