The temperature gauge, sending unit or associated wiring could be bad. If you drive more than about 10 to 15 miles the oil will actually be hotter than the coolant by 10 to 20 degrees. It is normal for the oil to be hot on an engine that is at operating temperature. Make sure it is not getting hot or damage to the engine is possible. Sounds like you need a mechanic to look at it.
