2004 Chevy S10 keeps getting p0128

I have replaced the t-stat, Engine coolant sensor, and the Air intake sensor and
I still will get a P0128 every other day.  The temp of the coolant when driving is
between 167-172.

You need a new 195°F thermostat. The engine must reach operating temperature (195°F) within ten minutes of a cold start up. Then remain at or slightly over that temperature when you're driving. Otherwise that trouble code will keep setting. Hope that helps! Jim
