How do you turn off the third brake light

You don't, it's a safety item so there is no switch, you have to manually disconnect it, and on some vehicles this will turn on the lamp out warning unit.

The third brake light has been required by law since January 1, 1986 in all 50 States. If you disconnect it or it's otherwise not working you can get a ticket for failure to maintain lights. HTH. -Jim
