what problems can result from removing catalytic converters from 2001 subaru outback hd6 3.0 LL Bean

Bought a used 2001 subaru outback hd6 3.0 LL Bean only has 164,000
miles on it. Had overheating problem after year of driving. Radiator plugged-
replaced. replaced thermostat. started overheating going up hills. replaced
head gaskets. waterpump checked-Ok
mechanic said comp code indicated O2 sensors went to replace them.  
replaced upsteam two. found previous owner took out catalytic converters on
exhaust and left no connection for downstream O2 sensor to plug in. can I
just replace catalytic converters and downstream O2 sensor or do i have to
replace entire exhaust? exhaust replacement-- $1500

It may not run right due to incorrect fuel/air ratio which also could make your fuel economy get worse.
