Which engines could I upgrade to that would be the easiest.

I love everything about this car, but I want it to struggle a bit less to get to
higher speeds and with passing people. I am 18 and building this car for my
girlfriend who just lost hers in an accident and is on foot as of now in college.
I won't do the swap myself, I will be taking it to go get changed but I would
like to know the easiest/ most reliable engine to install while not burning a
hole in my pocket.

Engine upgrades for your car are unrealistic. If you had scads of money you could install a turbo engine but you would be better off spending that money on a good car. If the car runs and drives I would do fluid changes, tune it up and change the filters and then give it to her.

2000 OB 2.5i? Leave it alone, as it will cost a lot to maintain this dinosaur anyway. Be sure to clean up the 4EAT to keep it happy.
