The rear brakes are new but
there's a grinding noise that
stops when I hit the brakes. My
peddle needs very little pressure
to engage the brakes.

Your brakes could be to tight or you could have over tighten you calipers.

I bought a new truck so this car sat unused for about 4 months. Its been back on the road for 2 days, been on the hiway no problems till today, day 2.

You say your brakes are new. Were they replaced before or after you let the car sit for 4 months? Could be just rust build up on the rotor that needs to get knocked down with use. New pads also require a cut-in to prep them for daily use. Drive the car gently for a few days and see if the noise goes away. Also, double check that the noise is really from the rear and not the front (which, I presume, still has older pads installed).
