can I unplug the oil pressure sending unit to stop the lite from flashing and the dinging of the chime driving me nuts.

lite comes on at idle and chimes as it goes on and off at idle only

No if you unplug the oil pressure switch the oil light will stay on steady, the cheapest probable fix would be to replace the oil pressure switch. If not you may have internal engine problems.
