Check engine light keeps returning. Tried a few different things. Please help

I have had a recent engine rebuild done (engine was horrible before, would shut off on its own so it was time for a rebuild, cam bearings were horrible, pistons shot, etc). Since the rebuild I noticed a strange shimmy in my idle, that almost can be felt during driving. (I have a lifted truck so its hard to tell if its the road or the engine). It idles fine, oil pressure is 40psi after warm up during idle, and around 60ish after warm up while driving. I have replaced 4 sensors, had the shop check the codes and reset about 3-4 times now. It appears after driving about 20 miles.

When the light reappears, the trucks shimmy seems worse but somewhat mild before the light appears. First check engine code showed that 2 sensors were out so I replaced them all minus the mass airflow sensor. Anyone able to help me with this please? I don't want to give up on this truck.

"it idles fine" as in, the rpm is where it should be. But it the truck itself shimmy's during idle, and there feels like there's a slight hesitation (shakiness) during driving.

Have you checked the timeing on the truck with a timeing light?

And stick with it, a new engine can take some time to get the bugs out. What was you last code?

Update - I noticed that when i press up on both window buttons on the driver side (as if to roll the windows up) my interrior lights as well as my headlights dim slightly, and my idle drops as well with a shimmy. My battery gage shows 2 lines past the mid point of 14. thanks for the advice rowefast, im really trying to hang on to this truck.
