What keeps VROOM from taking my car and not paying me for it?

What's to keep VROOM from taking my car and not paying me for it?

They send a Power of Attorney that gives them ownership of my car.  
Someone from VROOM picks up my car and keys.  VROOM promises to
send me a check in a few days.  Great!  What keeps them from keeping the
car and not sending me a check?

That would be stealing. Read the contract that you agree to or have a lawyer read it and explain it to you. I would think that the POA would be conditional on you receiving full payment.
