I have a 2000 ford escort that has a rough idle and dies when I stop. The engine light was on and said it was a sensor and we have changed all the sensors we can find. Please help

Have you found out if there are any codes stored in the computer. If the engine light was on then there should be a code. That code will at least give you a starting point as to where to look for the problem

Things to check out. Sounds like your idle air control valve is either dirty or faulty. Clean or replace it. Also could be a dirty throttle plate. Could also be a faulty throttle position sensor. Did you have the codes read and what were they? Hope this helps.

When you have a vacuum line pop off the intake it will do this in my experience. Trace the vacuum lines between the firewall and the motor and make sure they all are in good shape and connected. It might need a smoke test ran to find the leak though - ask around for a shop that can inject smoke in intake with car off to find leaks.
