Is my 300zx suppose to stay on when I disconnect
the spark wires?

If ur talking about the spark plug wires, every time u disconnect 1 cable, it'll miss, the more cables u disconnect, it miss even more til it dies out. This is because ur cutting off the spark and can't make the explosion that it's supossed to do on each cylinder
