My check engine light came on a few days ago out of nowhere and now when I try to speed up after coming to a stop my car sputters and acts like its losing power. What's do you think it could be?

I replaced the air filter and put 1/3 bottle of
fuel injector cleaner in my gas tank(because
its only on 1/4th of a tank right now) and it's
still happening

So-called 'fuel injector cleaner' is naphtha (kerosene = coal oil) and alcohol and a worthless waste of money. Read the label if you doubt that. To find out why your CEL is in you need an OBDII scan that will at least point you in the right direction of what is wrong. Running low on gas may have contributed to the sputtering, especially if you do it habitually

I work for Uhaul and we have OBDII scanners that I could use. Now that I think about it, it did start when my gas gauge hit just above the E mark. But I put gas in it today and it's still spuddering really bad. Bad enough to where I can't even speed up at a decent pace and people behind me usually just pass me up cause I'm accelerating so slowly.
