I have changed my engine on my Volkswagen Passat
2008 and the engine runs smooth and great but it has one
issue the alarm keeps coming up and it said on the screen

mechanic and he said the car is working well and it’s not
mixing oil with water it might be a sensor but the alarm is
too loud how can I turn it off?

I had this problem too - as it turns out it came from not using premium gas. The lower octane fuel wasn't providing enough internal combustion, eventually causing the system to overheat about 25 minutes into driving and affecting the oil pressure. I also noticed a bit of jerking when the car switched gears. I thought it was transmission, but it turned out to be combustion related as the fuel was low octane.
