Tempature gadget jumps from middle point to hot and fan running really loud in car

I had it checked out a few days ago and I was told I need
to start by having a cooling system fluid exchange, then
my thermostat and thermostat gasket needs to be
replaced. The issue is the price for the part was not bad it
was the labor I just paid to get the air fixed now this
happens and I start a new job tomorrow and can't drive
my car because of this issue. I asked if I could get the
fluid changed first then the thermostat the guy said no
they both need to be changed at the same time. Any
suggestions? And do you think this will fix the problem
because I don't want to pay that much money for nothing
and are their any ways around paying for both at once? I
need a break here
