Carbureted 350 chokes and dies, but will start again

83 T/A with a transplanted 350 starts, idles fine for
a few seconds, chokes and dies quickly, but will
start and repeat problem. Coolant Guage doesn't
budge, presumably from the swap. No rattling
under the hood or strange noises, just chokes out
and dies. Ideas?
