My air conditioner cuts off every time I press the gas or
have to go up hill. Basically when the RPMs are raised

AC system pressure may be low. Automotive AC systems have a low/high pressure cut out in the safety circuit to avoid running the compressor in those conditions. This is to prevent damage to the system. Have the pressures checked. Refrigerant may be low due to a leak.
