how do you determine how long a car has been for sale and where?

I see two pieces of info on many listings. The number of days a car if for sale at a dealer and the number of days the car has been listed on CarGurus. If for example the listing shows the car has been on the selling dealer's lot for 25 days and the number of days on the CarGurus site is greater-say 85 days--what does that mean?

Good question! Sometimes these car lots receive vehicles and go through an inspection process. If something needs to be addressed, they then down the vehicle and send it off to service for work. Sometimes it even depends on the type of vehicle, parts availability, etc. This often takes up a lot of time and can easily turn into a week or two (7-14 days) easily.
