83 Dodge 318 power ram

Truck idels fine but when I apply the brake it stalls
out it has a aftermarket single barrel carb. It was
rebuilt prior to me purchasing in 2002.
I have a new intake manifold and upgading to Holly
street avenger 4 barrel 600 cfm carb could that
correct the issue or is it something else entirely

Sounds like you have a massive vacuum leak in your power brake booster. There's a diaphragm in there that can rupture and leak air. You probably know your power brakes rely on engine vacuum and too much air coming into the intake leans out the fuel mixture, stalling the engine. You can usually hear a leak that big or test for a big drop in vacuum when the brakes are applied. I hope this helps.

Thanks brotherman I'll look into that and reply back that makes sense since my like for my e brake is on even when the e brake is off probably as a brake system check lite I appreciate the feedback
