2006 dodge caravan only when first starting off usually within first couple miles temp shoots to high, I pull over turn off vehicle just for seconds watch as gauge goes to normal and take off usually no more problems til next day when start again, fill with antifreeze and stops for couple weeks. other day actually started in mid day but car was parked for few hours. I was thinking some sort of temp sensor? being it only happens once a day and usually after first start only.

I would go over the entire cooling system. I would change the thermostat, new hoses if needed, flush the system good and change the sensors...
