Did you ever find the problem? I'm having the same issues I already replaced the water pump, radiator, fans and it still wants to over heat. Mostly after work it starts at the half way point then it starts going up pretty quickly when I'm at red lights then I start driving then it goes down. Today it was so close to passing to the red part and when I parked it I saw it started leaking closer to the passengers side and it had a shhhhh sound to it. My car is the Chrysler 300 srt8 hemi.

Sounds like you have air in your coolant system after replacing the radiator and other parts. Remove your cap off the resivor where add coolant . Make sure it's full turn your heater all the way up on high turn the fan on high crank the engine. As the engine gets hot water will overflow out of the resivor and you should see air bubbles burping from the resivor allow it to continue until you don't see bubbles anymore. Caution please stand back away from boiling hot water coming from resivor.As the water goes down in the resivor continue to refill it once it gets down to the cold fill line on the resivor up to the hot fill line. Carefully reinstall the resivor cap preferably a new cap. Check and make sure hot air is coming out of the vents. Go for about a 10 mile ride and see if your problem is solved air in the coolant system could cause your over heating problems.
