'11 335i sedan

Optimal running temp is 230-240. On faster driving
90-120mph, the temp runs to 250. Shouldn't the
water pump keep it at 240 ?

I would recommend replacing your thermostat if it's running around 240 F. Jim got that spot on... do NOT let a chain "mechanic" work on that car either. That is one of the most dangerous things a BMW owner can do.
