My coolant temperature read 243 is that normal

Too high! Check the coolant level and make sure the cooling fan is working. It is probably time for a cooling system service.

Just got it out the shop yesterday and they did a diagnostic test and said nothing's wrong with a new coolant cap

I recommend a full cooling system service - flush, hoses, new coolant etc. Oh and find another shop.
